White Chicken Chili




1 lb. large white beans

6 c. chicken broth

2 cloves garlic, minced

2 medium onions, chopped

2 (4oz) cans mild green chilies, chopped

2 tea ground cumin

1 ½ tea Greek oregano

¼ tea ground cloves

¼ tea cayenne pepper

4 c. chicken breast, cooked and diced





Combine beans, chicken broth, garlic, and 1 onion and bring to a boil.  Reduce heat and simmer until beans are soft ~ 3 hours.  Add more broth if necessary.  Sauté remaining onion in 1 tbl oil until tender.  Add chilies, cumin, oregano, cloves, and cayenne.  Add this mixture to the bean mixture.  Add chicken and simmer one more hour.  Serve with cheese, salsa, and sour cream.
