Tequila Lime Shrimp




1 large onion, chopped

2 jalapenos, seeded & chopped

2 tbl olive oil

2 lbs. large fresh shrimp, peeled & deveined

¼ c. orange juice

¼ c. lime juice

½ tea salt

¼ tea Cumin

¼ c. tequila

½ c. whipping cream

1 tbl tomato paste

1/3 c fresh cilantro, chopped



Sauté onion and jalapenos in olive oil over medium heat for about 5 minutes or until tender.  Add shrimp, orange juice, lime juice, salt, and cumin.  Sauté for 3 minutes allowing flavors to blend.  Stir in tequila, cream, tomato paste, and cilantro.  Cook until slightly thickened.  Serve over rice.
