Lentil Stew with Ham & Greens


1 ½ tbl olive oil

1 c onion, chopped

3 cloves garlic, minced

5 c fat free vegetable broth

1 c dried lentils

½ c chopped carrot

2 bay leaves

4 c chopped swiss chard or collard greens

1 c smoked ham

1 16 oz. jar of Saratoga Salsa – Hot

1 tsp dried basil

½ tsp dried thyme

½ tsp black pepper

3 tbl chopped fresh parsley

Freshly Grated Parmesan Cheese


Heat oil in Dutch oven over medium-high heat.  Add onion and garlic.  Sauté for 5 minutes.  Add broth, lentils, greens, carrot, and bay leaves.  Bring to a boil.  Reduce heat and simmer for 20 minutes.  Stir in salsa, basil, thyme, and pepper.  Simmer 10 or more minutes until lentils are tender.  Discard bay leaves.  Sprinkle with parsley and freshly grated Parmesan cheese.
