Herbed Pork Roast with Cranberry Chutney




2 tbl Herbs de Provence

1 tbl onion powder

1 tbl light brown sugar

2 tbl olive oil

1 tbl lemon juice

1 tea crushed garlic

2 ½ lb pork loin roast

Salt and Pepper


1 16oz Whole Cranberry Sauce

1 tea lemon juice 

¼ tea crushed garlic

1 tea Herbs de Provence








Preheat oven to 450 degrees.  In a small bowl, stir together first six ingredients.  Rinse and pat dry the pork roast.  Place it in a shallow pan or baking dish.  Season with salt and pepper and then rub with the herb mixture.  Place roast in oven and reduce heat to 350 degrees.  Roast for 30 minutes per pound.  Remove from oven, cover with foil and let rest for 10 minutes before slicing.


To prepare Chutney, in a medium bowl, combine cranberry sauce, lemon juice, garlic, and Herbs de Provence.  Stir thoroughly.  Serve

with Pork Roast.
