So simple, so delicious, ya gotta try it!

  • 1 lb lean Italian pork sausage, chopped (Deke's Meat from Watertown, NY if you can get it!)
  • 5 Tbs. olive oil
  • 1 can cannellini beans, drained
  • 8 oz. Half as Hot Saratoga Salsa
  • 2 cloves garlic, chopped
  • 1 sprig of sage
  • white wine
  • salt & pepper

Heat 3 tablespoons of the oil in a large frying pan or stir fry pan, add the sausages, and cook over moderate heat until browned on all sides. Puree salsa. Add salsa, garlic, sage, and salt and pepper to taste and stir well to mix Bring to a boil. Add the beans and a few ounces of wine stirring frequently for 15 minutes. Spoon the remaing oil over the dish and serve in shallow bowls.

Chile, Chili, Chilli or Chillie?
Within the world of spicy foods, there is some disagreement upon the spelling of the plant that we all know and love. Probably the best answer to this is that it all depends upon where you live. In North America, England, and Australia, it is commonly spelled "chili." In the South and Southwestern U.S. it is called "chile" and "chile pepper." In India and Asia, it is often spelled "chilli." And South Africa it will be seen as "chillie."
